Romantic Chemistry is an American IPA brewed by Dogfish Head Craft Brewery, and for the purposes of this craft beer review, the ale was served in an IPA glass from a bottle.
Pours a clear copper with an oh-so-thick head of cream-colored foam that reduces nice and slow. Small patches of sticky lace cling to the glass.
The aroma is slight with a scent that’s fruity and a touch hot with a hint of ginger.
The taste is initially juicy with apricot and mango before shifting to a mild finish of dry-hopped citrus and herbal bitterness. An undercurrent of caramel malt ties the palate together. The flavor takes on a slight boozy taste in the finish as the beer warms.
Mouthfeel is dry with a medium body and moderate carbonation.
Romantic Chemistry is nicely balanced and easy to drink. Its use of tropical fruit and malt does push the hops aside, but the flavor is sweet, boozy, and lovely. The brew does tick some of the boxes expected for the style, but as an IPA, it doesn’t quite measure up.
