Liquid Truth Serum, an American IPA by Dogfish Head Craft Brewery

Liquid Truth Serum is an American IPA brewed by Dogfish Head Craft Brewery, and for the purposes of this craft beer review, the ale was served in an IPA glass from a bottle.

The ale pours a crystal clear golden and is capped by a towering stack of puffy white foam. Its retention is excellent and the reduction leaves behind sparse patches of lace along the glass.

The aroma is strong and bright with a heady scent of citrus, fresh pine, and sweet tropical fruit.

A mild note of hoppy pine is followed by a malty base of doughy bread. A bite of grapefruit and resin is quickly met by sweet tropical fruit flavors of mango and papaya. As the beer warms, the intensity of the tropical fruit sweetness subsides. In its place, a taste of lemon appears.

The feel has a medium body and carbonation with a somewhat oily texture and a dry finish.

Its appearance is superb and the intensity of the aromatics are reminiscent of a stronger Double IPA. The IBU count is high but its taste leans malty. The feel is seemingly light and quite easy to drink.

Although it’s on the sweet side, the Liquid Truth Serum is still a very good IPA.

Post-Boil Hopping

Unlike most brews, all of the hopping for the Liquid Truth Serum occurs post boil. Have a look at the video from Dogfish Head founder Sam Calagione as he discusses this particular brewing technique.

Recommended Pairings

Dogfish Head recommends the following food pairings with their Liquid Truth Serum: teriyaki, chicken satay, pad thai, and stir-fried vegetables.

About the American IPA

The American IPA is the most popular craft beer style in the United States. And for good reason, too. When well crafted, its hoppy goodness delivers intense aromas and flavors that can be citrusy and fruity; floral and piney; earthy and herbal. The hops are complemented by a wide range of malts and other ingredients. It’s a popular playground for brewers to express their creativity and a veritable cornucopia for craft beer connoisseurs.
